The emphasis for this beer is the maltiness sweetness and yeast byproducts. A large percentage of Special B imparts raisin and plum-like characteristics, while the aromatic provides a richer malt perception. The chocolate is for color, and the Cara45 for more sweetness.
The Styrian Goldings provide an earthy base and fruitiness to the beer. Fermented in the upper 60s up to the lower 70s, bubble gum and slight fruity esters are made. The signature of this beer is the rich dark fruit flavors, but without being overly heavy. It’s perfect for a winter evening and a natural with a wide range of foods.
Suggested Pairings:
Duck confit, rack of lamb, shepard’s pie, beef stew, anything pork.
