The base malt of pale malt is blended with an amount of Maris Otter for a more nutty pale malt character. The dark Munich and medium crystal give the beer toffee/caramel sweetness, while the special B is for undertones of dark fruit (plums/raisins).
The chocolate malt is for color and the carapils is for body and residual mouthfeel.
Challenger hops have a slight currant aroma and flavor. Fuggles (tea and earthiness) are the consummate blending hop for English ales with Goldings (flowery/lemony).
Moderately high fermentation temperatures (72 degrees) allow for the release of fruity aroma compounds (esters). This is our take on an ESB -think Fullers- with a west coast attitude.
