Black Diamond Brewing Process
At Black Diamond we always buy our Malted Barley whole and crack it open through our roller
mill
. Milled Barley, also known as grist, is mixed with hot water (liquor) in the Mash Tun producing a mash. A sweet clear liquid called wort is filtered out of the mash in the
Lauter Tun
and then transferred to the kettle.
When the wort is brought to a rolling boil in the kettle, we add our bittering hops. (Finishing hops are added later to produce the aroma.) The hot wort is cooled to fermentation temperature through the heat exchanger, and then transferred to fermentation vessels (tanks).
In the
Fermentation Vessels
, we add the brewers yeast. Fermentation begins when the yeast transforms the sweet wort into a flavorful solution containing alcohol and CO
2
. After fermentation, the beer is filtered to remove the yeast and any other particulates. The yeast-free beer is then stored in
Bright Tanks
until it is time to process it either into kegs or bottles.
The end result is a deliciously smooth ale which keeps beer lovers requesting Black Diamond brews time and again.
